Carrot Cake Layer:

  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg

Cheesecake Layer:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 egg
  • ½ tsp vanilla extract

How to Make It:

Step 1: Preheat & Prep

  1. Preheat oven to 350°F (175°C).
  2. Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.

Step 2: Make the Carrot Cake Batter

  1. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  2. In a separate large bowl, whisk together oil, brown sugar, granulated sugar, egg, and vanilla.
  3. Stir in the grated carrots and nuts (if using).
  4. Gradually fold in the dry ingredients until just combined.

Step 3: Make the Cheesecake Layer

  1. In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.

Step 4: Assemble the Bars

  1. Spread ¾ of the carrot cake batter into the prepared pan.
  2. Pour the cheesecake mixture evenly over the batter.
  3. Drop spoonfuls of the remaining carrot cake batter on top, then use a knife or toothpick to create a swirl pattern.

  1. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out mostly clean.
