Instructions
Step 1: Prep the Apples
Wash and core the apples using an apple corer or a small cookie cutter.
Slice into ¼-inch thick rounds to create apple “rings.”
Toss slices with lemon juice to keep them from browning.
Step 2: Make the Pancake Batter
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
In another bowl, mix the milk, egg, melted butter, and vanilla extract.
Combine the wet and dry ingredients and stir until just combined (don’t overmix). Batter should be thick but pourable.
Step 3: Heat the Skillet
Place a skillet or griddle over medium heat and add a small amount of butter or oil.
Let it heat until the surface sizzles when a drop of water hits it.
Step 4: Dip and Cook the Apple Rings
Dip each apple ring into the pancake batter, coating both sides evenly. Let excess batter drip off.
Place gently on the skillet and cook for 2–3 minutes per side, or until golden brown and cooked through.
Repeat with remaining apple rings, adding more butter or oil as needed.
