Instructions
Step 1: Prepare the Pancake Batter
- In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon (if using), and salt.
- In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter.
- Gently warm the Biscoff spread in the microwave for about 15–20 seconds to soften it, then add it to the wet ingredients. Whisk until fully combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix—it’s okay if there are a few lumps.
Step 2: Cook the Pancakes
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a little butter.
- Once the pan is hot, pour about ¼ cup of the pancake batter onto the skillet for each pancake.
- Cook for 2-3 minutes on one side, or until you see bubbles forming on the surface and the edges begin to set.
- Flip the pancake and cook for an additional 1-2 minutes on the other side, until golden brown.
- Repeat with the remaining batter, greasing the skillet as needed.
Step 3: Serve and Enjoy!
- Stack the pancakes on a plate and top with a spoonful of warm Biscoff spread.
