Ingredients
- 1 lb shrimp, peeled and deveined
- 4 cups cooked rice (preferably cold, leftover works great)
- 2 tbsp olive oil (or vegetable oil)
- 1 small onion, diced
- 1 cup bell peppers, diced (red, green, or yellow)
- ½ cup frozen peas
- 2 cloves garlic, minced
- 2 tbsp Cajun seasoning (store-bought or homemade)
- 2 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 2 large eggs
- 1 tbsp green onions, chopped (for garnish)
- Lemon wedges (optional, for serving)
Instructions
Step 1: Prepare the Shrimp
- In a bowl, toss the shrimp with 1 tablespoon of Cajun seasoning to coat evenly.
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
- Cook the shrimp for about 2-3 minutes per side until they’re pink and cooked through. Remove the shrimp from the pan and set aside.
Step 2: Cook the Vegetables
- In the same skillet, add another 1 tablespoon of oil.
- Add the onion, bell peppers, and peas to the pan. Sauté for about 3-4 minutes until the vegetables are tender and the onions are translucent.
- Add the garlic and cook for another 30 seconds, stirring to combine.
Step 3: Make the Fried Rice
- Add the cold rice to the skillet with the vegetables. Use a spatula to break up any clumps and ensure the rice is well mixed.
- Stir in the soy sauce, Worcestershire sauce, and the remaining Cajun seasoning.
- Cook for 3-4 minutes, allowing the rice to heat through and soak up the flavors.
Step 4: Scramble the Eggs
- Push the rice mixture to one side of the skillet.
- Crack the eggs into the empty space and scramble them, cooking until they’re just set, about 2 minutes.
- Mix the scrambled eggs into the rice.
Step 5: Add the Shrimp and Serve
- Add the cooked shrimp back into the pan with the rice. Stir everything together to combine and heat through.
- Garnish with green onions and serve with lemon wedges on the side for an extra burst of freshness.
Notes
Use cold rice – Cold, day-old rice works best for fried rice because it’s less sticky and fries up better.
Adjust the spice level – If you prefer less heat, use less Cajun seasoning or opt for a mild version.
Add veggies – Feel free to mix in other veggies like corn, zucchini, or mushrooms.
Don’t overcook the shrimp – Shrimp cook quickly, so be sure to avoid overcooking them to keep them tender.
