Ingredients

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil (or sesame oil)
  • 2 cloves garlic, minced
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 cups cabbage, shredded
  • 4 cups cooked chow mein noodles (or spaghetti noodles)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil (optional)
  • 1/2 teaspoon ground ginger
  • Salt and pepper, to taste
  • Green onions, for garnish (optional)
  • Sesame seeds, for garnish (optional)

Instructions

Step 1: Cook the Chicken

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the sliced chicken to the pan and season with a pinch of salt and pepper. Stir-fry for 5–6 minutes until the chicken is cooked through and slightly golden. Remove the chicken from the pan and set aside.

Step 2: Cook the Vegetables

  • In the same pan, add another tablespoon of vegetable oil.
  • Add garlic, onion, bell pepper, carrot, and cabbage. Stir-fry for 3–4 minutes until the vegetables are tender-crisp.

Step 3: Add the Noodles

  • Add the cooked noodles to the skillet with the vegetables. Toss to combine.

Step 4: Add the Sauce

  • In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, sesame oil, and ginger. Pour the sauce over the noodles and toss everything together until well coated.

Step 5: Add the Chicken Back In

  • Return the cooked chicken to the pan and toss to combine. Stir-fry everything together for another 2–3 minutes to ensure everything is heated through.

Step 6: Serve

 

  • Garnish with green onions and sesame seeds, if desired. Serve hot and enjoy!

Notes

  • Noodles: Use chow mein noodles if you can find them, but spaghetti or other noodles work fine as substitutes.
  • Don’t Overcrowd the Pan: Stir-frying is best in batches. If the pan is too crowded, the ingredients will steam rather than fry.

 

  • Customize the Veggies: Add more vegetables like mushrooms, broccoli, or snow peas based on your preferences.
