Ingredients
For the Chicken:

3 boneless, skinless chicken breasts (cut lengthwise to make 6 thin cutlets)

½ cup all-purpose flour (for dredging)

½ tsp salt

½ tsp black pepper

1 tbsp olive oil

1 tbsp butter
For the Sauce:

1 tbsp butter
-
1 small yellow onion, finely chopped

2 cloves garlic, minced

1½ cups sliced fresh mushrooms (white or cremini)

1 can (10.5 oz) cream of mushroom soup

½ cup chicken broth
-
½ cup milk
-
½ tsp dried thyme
-
¼ tsp salt

¼ tsp ground black pepper
For the Topping:

6 slices of Muenster cheese or mild mozzarella

2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
Step 1: Prepare and Sear the Chicken

Preheat your oven to 350°F (175°C).

In a shallow bowl, mix the flour, salt, and pepper.

Lightly coat each chicken cutlet in the flour mixture.

In a large skillet, heat the olive oil and butter over medium-high heat.

Sear the chicken cutlets for 2-3 minutes on each side until lightly golden. They don’t need to be cooked through.

Place the browned chicken cutlets in a greased 9×13-inch baking dish.
Step 2: Make the Mushroom Sauce

In the same skillet, melt 1 tbsp butter over medium heat.

Add chopped onions and sauté for 2-3 minutes until translucent.

Stir in the garlic and sliced mushrooms. Cook for 5-6 minutes, stirring occasionally, until the mushrooms are tender and browned.

Add the cream of mushroom soup, chicken broth, and milk. Stir until well combined.

Layer one slice of cheese over each piece of chicken.
