- 1 lb beef sausage (remove casing if using links)
- 4 cups butternut squash, peeled and cubed
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth (or vegetable broth)
- 1 cup heavy cream (or coconut milk for dairy-free)
- 1 tsp dried thyme
- ½ tsp ground cinnamon
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley or thyme for garnish (optional)
Instructions
Step 1: Brown the Sausage
- Heat 1 tablespoon olive oil over medium heat in a large pot or Dutch oven.
- Add the beef sausage and break it apart with a spoon. Cook until browned and fully cooked, about 5-7 minutes. Remove the sausage and set aside.
Step 2: Sauté the Veggies
- In the same pot, add the remaining 1 tablespoon olive oil.
- Add the diced onion and cook for 3-4 minutes, until softened.
- Stir in the minced garlic, dried thyme, and ground cinnamon. Cook for another 30 seconds until fragrant.
Step 3: Add Squash and Broth
- Add the butternut squash and stir to combine.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat to a simmer and cook for 15-20 minutes, or until the squash is soft.
Step 4: Blend the Soup
- Use an immersion blender to puree the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a blender in batches.
- Once smooth, return the soup to the pot.
Step 5: Add Cream and Sausage
- Stir in the heavy cream and the cooked sausage.
- Let the soup simmer for 5-7 minutes, allowing the flavors to meld together.
- Season with salt and pepper to taste.
Step 6: Serve & Garnish
- Serve the soup in bowls and garnish with fresh parsley or thyme if desired.

- Creaminess: For an extra creamy soup, blend the soup until completely smooth.
- Add vegetables: Feel free to add carrots, celery, or potatoes for more texture and flavor.
