Ingredients
For the Creamy Chicken and Rice:

1 lb boneless, skinless chicken breasts or thighs, diced

1 tbsp olive oil

1 small yellow onion, finely chopped

2 cloves garlic, minced

1 cup long-grain white rice (uncooked)

2½ cups low-sodium chicken broth

1 cup milk (whole or any unsweetened plant-based milk)

½ cup sour cream or plain Greek yogurt

1 cup shredded cheddar cheese

1 cup frozen peas and carrots (or any mixed vegetables)

½ tsp salt

½ tsp black pepper

½ tsp paprika

¼ tsp dried thyme
For Garnish:

Instructions
Step 1: Sauté the Chicken

Heat olive oil in a large skillet over medium-high heat.

Add diced chicken, season with salt, pepper, and paprika, and cook for 5–6 minutes until browned.

Remove chicken from the skillet and set aside.
Step 2: Cook the Onion and Garlic

In the same skillet, reduce heat to medium.

Add chopped onion and sauté for 2–3 minutes until softened.

Add garlic and cook for another 30 seconds until fragrant.
Step 3: Add Rice and Broth

Stir in the uncooked rice and cook for 1 minute to lightly toast it.

Pour in chicken broth and dried thyme, stirring to combine.
