Ingredients

2 large English cucumbers, thinly sliced

1 tbsp fresh dill, chopped

1 tbsp fresh parsley, chopped (optional)

½ tsp salt

¼ tsp black pepper
For the Creamy Dressing:

¾ cup plain Greek yogurt

1 tbsp olive oil

2 tsp apple cider vinegar (or lemon juice)

1 tsp honey

1 clove garlic, finely minced or grated

Instructions
Step 1: Slice the Cucumbers

Wash and dry the cucumbers.

Slice them very thin using a sharp knife or mandoline for even slices.

Thinly slice the red onion and set aside.
Step 2: Optional – Salt the Cucumbers
