- 12 oz fettuccine pasta
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 beef sausages, sliced
- 4 cloves garlic, minced
- 1 cup heavy cream
- ¾ cup whole milk
- 1 cup grated Parmesan cheese
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes (optional)
- ½ cup pasta water (reserved)
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Fettuccine
- Bring a large pot of salted water to a boil.
- Cook the fettuccine according to package instructions until al dente.
- Reserve ½ cup of pasta water, then drain and set aside.
Step 2: Sear the Beef Sausages
- Heat olive oil in a large skillet over medium heat.
- Add the sliced beef sausages and cook for 4–5 minutes, until browned and slightly crispy.
- Remove from the skillet and set aside.
Step 3: Make the Garlic Parmesan Sauce
- In the same skillet, melt butter over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in heavy cream and whole milk, stirring constantly.
- Add Parmesan cheese, salt, black pepper, Italian seasoning, and red pepper flakes (if using).
- Simmer for 2–3 minutes until the sauce thickens slightly.
Step 4: Combine Everything
- Add the drained fettuccine to the skillet and toss to coat in the sauce.
- Stir in the cooked beef sausages. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
- Let it cook for 1–2 minutes, allowing the flavors to meld.
Step 5: Serve & Enjoy
- Garnish with fresh parsley and extra Parmesan cheese.
