For the Steak

  • 2 ribeye steaks (or sirloin, filet mignon, or your preferred cut)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder

For the Alfredo Sauce

  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

For the Pasta

  • 12 oz fettuccine pasta (or any pasta of your choice)
  • Water (for boiling pasta)
  • Salt, for the pasta water

Instructions

Step 1: Cook the Steak

  1. Season the steaks with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the steaks and sear for about 3-4 minutes per side for medium-rare, or adjust the cooking time based on your preferred doneness.
  4. Remove the steaks from the skillet and let them rest for 5 minutes before slicing into strips against the grain.

Step 2: Make the Alfredo Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add the minced garlic and cook for 1-2 minutes until fragrant.
  3. Pour in the heavy cream, bring it to a simmer, and cook for about 3-4 minutes, stirring occasionally.
  4. Reduce the heat and slowly whisk in the Parmesan cheese until the sauce is smooth and creamy.
  5. Season with garlic powder, salt, and pepper to taste.

Step 3: Cook the Pasta

  1. In a separate pot, cook the fettuccine pasta in salted boiling water according to the package instructions (about 8-10 minutes). Drain the pasta, reserving about 1/2 cup of pasta water.

Step 4: Combine the Pasta and Sauce

  1. Add the cooked pasta to the Alfredo sauce and toss to coat the noodles evenly. If the sauce is too thick, add a little bit of the reserved pasta water to reach your desired consistency.

Step 5: Assemble the Dish

  1. Slice the cooked steak into strips and arrange them on top of the creamy Alfredo pasta.
  2. Garnish with fresh parsley and serve immediately.

Notes

  • Use your favorite cut of steak – Ribeye, sirloin, or filet mignon all work wonderfully in this dish.
  • Use freshly grated Parmesan cheese for the best flavor and creaminess.
  • Reserve pasta water – It helps to thicken the sauce and ensures the pasta stays creamy and coated.
  • Let the steak rest – This helps to keep it juicy and tender.
  • Adjust garlic to your taste – If you love garlic, feel free to add more.
