Ingredients

Zucchini (1 medium, grated) – The veggie base for moisture and flavor.

Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with cooking spray or olive oil.

Step 2: Grate the Zucchini and Potato
Grate the zucchini and potato using a box grater or food processor. Squeeze out excess moisture from the zucchini and potato using a clean kitchen towel or paper towels.

Step 3: Mix the Ingredients
In a large mixing bowl, combine the grated zucchini, potato, Parmesan cheese, breadcrumbs, flour, garlic powder, salt, and pepper. Crack the egg into the mixture and stir until everything is evenly combined.

Step 4: Spoon Into Muffin Tin
Using a spoon or ice cream scoop, evenly distribute the mixture into the muffin tin cups. Press the mixture gently to compact it.

Step 5: Bake the Muffins
Bake the muffins in the preheated oven for 25-30 minutes, or until the tops are golden brown and crispy. A toothpick should come out clean when inserted into the center.

 

Step 6: Serve & Enjoy
Allow the muffins to cool slightly before removing them from the muffin tin. Serve warm with a side of dipping sauce, or enjoy them as is!
