Ingredients
For the Dough:

¼ cup unsalted butter

1 tbsp granulated sugar

¼ tsp salt

1 cup all-purpose flour

1 large egg

1 tsp vanilla extract
For the Cinnamon Sugar Coating:

½ cup granulated sugar

1½ tsp ground cinnamon

2 tbsp melted butter (for brushing)

Instructions
Step 1: Make the Dough
In a medium saucepan, combine water, butter, sugar, and salt.
Bring to a boil over medium heat, then reduce heat and stir in the flour all at once.
Stir quickly with a wooden spoon until the dough forms a ball and pulls away from the sides (about 1 minute).
Remove from heat and let the dough cool for 5 minutes.
Step 2: Mix in the Egg & Vanilla
Add the egg and vanilla extract to the slightly cooled dough.
Use an electric mixer or beat by hand until smooth and sticky.
The dough should be thick and pipeable—similar to choux pastry.
Step 3: Pipe the Dough
Transfer dough to a piping bag fitted with a large star tip.
Pipe 1 to 1.5-inch pieces onto a parchment-lined baking sheet.
Use scissors to snip off the dough for neat bites.
Step 4: Air Fry the Churro Bites
Preheat your air fryer to 375°F (190°C).
Lightly grease the air fryer basket.
Arrange churro bites in a single layer without overcrowding.
Air fry for 8–10 minutes, flipping halfway through, until golden brown and puffed.
Repeat in batches as needed.
Step 5: Coat in Cinnamon Sugar
While churro bites are still warm, brush them with melted butter.
Mix granulated sugar and cinnamon in a shallow bowl.
Roll each bite in the cinnamon sugar until fully coated.
Step 6: Serve & Dip
Serve immediately while warm.
