Why You’ll Love This Recipe

Soft & Fluffy – Light, airy pancakes with a delicious texture.
Banana Flavor – Sweet, naturally rich flavor from ripe bananas.
Brown Sugar Twist – A hint of caramelized sweetness from brown sugar.
Quick & Easy – Made in just 20 minutes for a satisfying breakfast!

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large banana, mashed
  • ¾ cup milk (dairy or plant-based)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

Step 1: Prepare the Dry Ingredients

  1. In a large bowl, whisk together the flour, brown sugar, baking powder, salt, and cinnamon until evenly combined.

Step 2: Prepare the Wet Ingredients

  1. In another bowl, mash the banana until smooth (a few lumps are okay).
  2. Add the milk, egg, melted butter, and vanilla extract to the mashed banana, and whisk together until fully combined.

Step 3: Combine the Wet and Dry Ingredients

  1. Pour the wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix, as this will make the pancakes dense. The batter should be slightly lumpy.

Step 4: Cook the Pancakes

  1. Heat a griddle or non-stick skillet over medium heat and lightly grease with butter or oil.
  2. Once the skillet is hot, pour ¼ cup of batter onto the skillet for each pancake.
  3. Cook for 2-3 minutes, until bubbles form on the surface, then flip and cook for another 2-3 minutes, or until golden brown on both sides.
  4. Continue with the remaining batter, greasing the skillet as needed.

Step 5: Serve & Enjoy!

  1. Serve the pancakes hot, topped with extra sliced bananas, a drizzle of maple syrup, or a dusting of powdered sugar.

Tips for Success

Use Ripe Bananas – The riper the banana, the sweeter and more flavorful the pancakes will be.
Don’t Overmix – Stir just until the ingredients are combined to keep the pancakes light and fluffy.
Adjust Heat – If the pancakes brown too quickly, lower the heat slightly to allow the inside to cook through.
Add Toppings – Get creative with toppings like chocolate chips, walnuts, or whipped cream for extra indulgence!

What to Serve With These Pancakes

  • Toppings: Maple syrup, fresh banana slices, whipped cream, or chocolate chips.
  • Sausage or Bacon: A savory side to balance out the sweetness.
  • Fruit Salad: A light, refreshing side to complement the pancakes.
