For the Egg Base:

  • 6 large eggs

  • 1 cup ricotta cheese (preferably whole milk for extra creaminess)

  • ¼ cup milk (any variety, dairy or plant-based)

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp garlic powder

  • ¼ tsp dried thyme or oregano

  • Pinch of nutmeg (optional but adds depth)

Veggies & Add-Ins:

  • 1 cup baby spinach, chopped

  • ½ cup cherry tomatoes, halved

  • ½ cup red bell pepper, finely diced

  • ¼ cup green onions, chopped

  • ½ cup shredded mozzarella or cheddar cheese

  • 2 tbsp chopped fresh parsley or basil (for garnish)

Optional Toppings:

  • Extra cheese for topping

  • Fresh herbs before serving


Instructions

Step 1: Prep the Oven and Dish
Preheat your oven to 375°F (190°C).
Lightly grease your pie dish with butter or non-stick spray to prevent sticking.

Step 2: Sauté the Veggies (Optional)
In a skillet over medium heat, sauté the spinach, peppers, and green onions for 3-4 minutes until softened.
Let them cool slightly before adding to the egg mixture.
This step removes extra moisture and adds flavor.

Step 3: Make the Egg Mixture
In a large mixing bowl, whisk the eggs, ricotta, and milk until well combined.
Season with salt, pepper, garlic powder, thyme, and nutmeg.
Whisk until light and airy—this will help create that fluffy texture.

Step 4: Add Veggies and Cheese
Stir the sautéed vegetables and cherry tomatoes into the egg mixture.
Add the shredded cheese and give it a final stir.
Pour the mixture into your greased pie dish and smooth out the top.

Step 5: Bake the Quiche
Bake for 35-40 minutes, or until the center is just set and the top is slightly golden.
Check doneness by inserting a knife in the center—it should come out clean.

Step 6: Cool & Garnish
Let the quiche cool for at least 10 minutes before slicing.
Garnish with chopped herbs or a sprinkle of extra cheese if desired.
Serve warm, at room temperature, or even chilled.

Full-Fat Ricotta – Use whole milk ricotta for the richest, creamiest texture.
