Ingredients

Scale

For the Burger Patties:

  • 1 lb ground beef

  • 1 egg

  • ¼ cup plain breadcrumbs

  • 1 tbsp soy sauce

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt

  • ¼ tsp black pepper

For Assembly:

  • 1 cup fresh pineapple chunks or rings, cut into 1-inch pieces

  • 6 slices cheddar or provolone cheese, quartered

  • 12 tbsp olive oil or butter (for cooking)

  • ⅓ cup teriyaki glaze (store-bought or homemade)

  • Toothpicks or small skewers

Optional Add-ons:

  • Jalapeño slices

  • Red onion rings

  • Mini slider buns or Hawaiian rolls

  • Fresh cilantro or lettuce

  • Pickles

Instructions

Step 1: Make the Mini Burger Patties
In a mixing bowl, combine ground beef, egg, breadcrumbs, soy sauce, garlic powder, onion powder, salt, and pepper.
Mix gently until just combined—overmixing can make the meat tough.
Shape into small patties about 1.5 inches wide. You should get 18–20 mini patties.

Step 2: Cook the Patties
Heat a skillet or grill pan over medium heat with olive oil or butter.
Cook the patties for about 3–4 minutes per side or until browned and cooked through.
In the last minute, place a quarter slice of cheese on each patty and cover to melt.

Step 3: Caramelize the Pineapple
In the same pan or a clean one, sear the pineapple chunks or slices for 1–2 minutes per side until golden and lightly caramelized.

Step 4: Assemble the Bites
On each toothpick or skewer, layer one piece of pineapple, one cheesy mini burger, and optional toppings like red onion or jalapeño.
Arrange all the bites on a serving platter.

Step 5: Drizzle with Teriyaki Glaze
Warm the teriyaki glaze slightly and drizzle over each burger bite.
Serve warm and enjoy!

Notes

Use Fresh Pineapple – It caramelizes beautifully and adds natural sweetness.
Don’t Overcook – Keep the patties juicy by cooking just until done.
Try Mini Buns – Turn these into sliders for a heartier bite.
Add a Kick – A thin jalapeño slice adds just the right amount of heat.
Teriyaki Glaze Matters – Go for a thick glaze that clings well or reduce regular sauce on the stove.
