Ingredients
- All-Purpose Flour (2 cups) – The base for soft, flaky biscuits.
- Baking Powder (1 tbsp) – Helps the biscuits rise.
- Salt (½ tsp) – Enhances the flavor.
- Black Pepper (¼ tsp) – Adds a mild kick.
- Butter (6 tbsp, cold & cubed) – Creates a flaky texture.
- Cottage Cheese (1 cup, small curd) – Adds moisture and richness.
- Milk (¼ cup) – Helps bind the dough.
- Fresh Herbs (2 tbsp, chopped) – Use parsley, chives, or dill.
- Garlic Powder (½ tsp, optional) – Adds a subtle savory boost.
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together flour, baking powder, salt, black pepper, and garlic powder (if using).
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or fork to mix until the texture resembles coarse crumbs.
Stir in the cottage cheese, milk, and chopped herbs. Mix gently until a dough forms. If the dough is too dry, add a little more milk.
Turn the dough onto a lightly floured surface. Pat it into a ¾-inch thick circle. Use a biscuit cutter or a glass to cut out rounds, or shape them by hand.
Place the biscuits on the prepared baking sheet, leaving space between them. Bake for 15–18 minutes, or until golden brown on top.
Let the biscuits cool slightly before serving. Enjoy them warm with butter or as a side dish.
Notes
- Use Cold Butter: This ensures flaky layers.
- Don’t Overmix: Mix just until combined to keep them tender.
- Chill Before Baking: If the dough is warm, refrigerate for 10 minutes before baking.
