2 tbsp olive oil
-
1 tsp coarse sea salt
For the Steak Bites:
-
1 lb sirloin steak, cut into 1-inch cubes
-
1 tbsp olive oil
-
1 tbsp unsalted butter
-
2 cloves garlic, minced
-
1 tsp Worcestershire sauce
-
1 tsp salt
-
½ tsp black pepper
-
½ tsp smoked paprika
-
½ tsp onion powder
For the Toppings:
-
1 cup shredded sharp cheddar cheese
-
½ cup sour cream
-
½ cup beef bacon bits or turkey bacon, cooked and crumbled
-
¼ cup green onions, finely sliced
-
2 tbsp unsalted butter (for inside each potato)
-
Fresh parsley or chives for garnish (optional)
Instructions
Step 1: Bake the Potatoes
-
Preheat your oven to 400°F (200°C).
-
Scrub potatoes clean, then dry and pierce each a few times with a fork.
-
Rub each potato with olive oil and sprinkle with sea salt.
-
Place potatoes directly on the oven rack or a baking sheet and bake for 50-60 minutes until fork-tender.
-
Remove from the oven and let cool slightly before handling.
Step 2: Cook the Steak Bites
6. While the potatoes are baking, season the steak cubes with salt, pepper, smoked paprika, and onion powder.
7. Heat olive oil in a large skillet over medium-high heat.
8. Add steak bites in a single layer (cook in batches if needed) and sear for 2-3 minutes per side until browned and cooked to your desired doneness.
9. Reduce heat to medium, add butter, garlic, and Worcestershire sauce.
10. Stir and toss the steak bites in the butter-garlic mixture for 1-2 minutes. Remove from heat and set aside.
Step 3: Prepare the Potatoes for Stuffing
11. Cut a slit down the center of each potato and gently press the ends to open it up.
12. Fluff the inside with a fork and add about ½ tbsp butter into each potato.
13. Sprinkle in some shredded cheese and let it melt into the hot potato.
Step 4: Assemble Your Loaded Potatoes
14. Divide the steak bites evenly and spoon them over each baked potato.
15. Top with more shredded cheddar, a generous dollop of sour cream, and crumbled beef or turkey bacon.
16. Sprinkle with green onions and garnish with fresh parsley or chives if desired.
Step 5: Serve and Enjoy
17. Serve immediately while hot, with any extra toppings on the side.
18. Pair with a fresh salad or roasted veggies for a balanced plate.
Notes
Choose the Right Potato – Russets are best for fluffy interiors and crispy skin.
Hot Skillet is Key – A good sear on the steak locks in flavor.
Don’t Overcrowd – Cook steak in batches to avoid steaming.
Fluff the Potato – Use a fork to make the inside light and airy before stuffing.
Add Sauce – Drizzle pan juices from the steak over the potato for extra flavor.
