Ingredients

  • 2 tablespoons olive oil
  • 1 small yellow onion, diced

  • 3 cloves garlic, minced

  • ½ cup sun-dried tomatoes in oil, chopped

  • 1 teaspoon Italian seasoning

  • ¼ teaspoon red pepper flakes (optional)

  • 4 cups chicken broth

  • 2 cups shredded rotisserie or cooked chicken

  • ¾ cup heavy cream (or half and half)

  • ½ cup grated Parmesan cheese

  • 2 cups fresh baby spinach

  • Salt & pepper to taste

 

  • Optional: 1 tablespoon tomato paste (for deeper color & flavor)


Instructions

Step 1: Sauté the Aromatics

Heat olive oil in a large pot over medium heat. Add onion and sauté for 3–4 minutes until soft and translucent. Stir in garlic and cook for another 30 seconds.

Step 2: Add Sun-Dried Tomatoes & Seasonings

Add chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes. Sauté for 1–2 minutes to release flavor.

Optional: Stir in tomato paste and cook for 1 minute to deepen the flavor base.

Step 3: Build the Soup

Pour in chicken broth and bring to a simmer. Stir in shredded chicken and cook for 5–6 minutes until heated through.

Step 4: Make It Creamy

Reduce heat to low and stir in heavy cream and Parmesan. Let it simmer gently (don’t boil) until everything is creamy and blended.

Step 5: Finish with Spinach

 

Add fresh spinach and cook for 1–2 minutes until wilted. Taste and adjust salt and pepper as needed.

Notes

Use Pre-Cooked Chicken – Rotisserie or leftover roasted chicken works great for speed.

Low Heat for Cream – To avoid curdling, add dairy on low heat only.
