  • 1 cup mascarpone cheese (room temperature)

  • 4 large eggs (separated)

  • 1 tsp cream of tartar

  • 1 tbsp sweetener of your choice (like monk fruit or erythritol)

  • 1 tsp vanilla extract (optional)

Instructions

Step 1: Prepare the Ingredients

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.

  2. Separate the egg whites and egg yolks into two different bowls.

Step 2: Beat the Egg Whites

  1. Add the cream of tartar and a pinch of salt to the egg whites.

  2. Using an electric mixer, beat the egg whites on high speed until stiff peaks form. This should take about 3-5 minutes. Stiff peaks are important to get the light, airy texture of the bread.

Step 3: Make the Mascarpone Mixture

  1. In a separate bowl, whisk together the mascarpone cheese, egg yolks, sweetener, and vanilla extract until smooth and well combined. The mixture should be thick and creamy.

Step 4: Fold the Mixtures Together

  1. Carefully fold the mascarpone mixture into the whipped egg whites. Use a spatula and fold gently to avoid deflating the egg whites, which will help maintain the light texture of the bread.

Step 5: Shape & Bake

  1. Spoon the mixture onto the prepared baking sheet, forming 6-8 rounds, depending on how large you want the bread pieces.

  2. Smooth the tops of the rounds slightly to ensure even baking.

  3. Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown and the bread feels firm to the touch.

Step 6: Cool & Serve

 

  1. Allow the cloud bread to cool on the baking sheet for a few minutes before transferring it to a wire rack to cool completely.

  2. Once cooled, serve and enjoy! You can top it with butter, use it for sandwiches, or enjoy it as a snack.

Notes

Use Room Temperature Mascarpone – Make sure your mascarpone is at room temperature to prevent lumps and create a smooth mixture.

Beat the Egg Whites Well – The key to a light and airy texture is beating the egg whites to stiff peaks. This step is crucial, so be patient!

Gently Fold the Mixtures – When combining the mascarpone mixture with the whipped egg whites, be gentle to keep as much air in the batter as possible.

 

Watch the Baking Time – Don’t overbake the cloud bread. You want it golden brown on top but still soft inside.
