Ingredients

  • Chicken Breasts (2 large, boneless & skinless): The perfect canvas for stuffing.
  • Fresh Spinach (1 cup, chopped): Adds color and nutrition.
  • Feta Cheese (¼ cup, crumbled): Creamy and slightly tangy.
  • Sun-Dried Tomatoes (¼ cup, chopped): Brings a rich, slightly sweet flavor.
  • Garlic (2 cloves, minced): Boosts the aroma and depth of taste.
  • Olive Oil (2 tbsp): For cooking and sealing in moisture.
  • Dried Oregano (1 tsp): Classic Mediterranean seasoning.
  • Paprika (½ tsp): Adds a warm, smoky hint.
  • Salt & Pepper: To taste.

Instructions

1. Prepare the Stuffing
In a bowl, mix together the chopped spinach, feta cheese, sun-dried tomatoes, minced garlic, and 1 tablespoon of olive oil. Stir well and set aside.

2. Butterfly the Chicken
Slice each chicken breast lengthwise to create a pocket, being careful not to cut all the way through.

3. Stuff the Chicken
Spoon the filling into each pocket and secure the edges with toothpicks to keep everything inside.

4. Season the Chicken
Rub the chicken with the remaining olive oil and sprinkle with oregano, paprika, salt, and pepper.

5. Sear the Chicken
Heat a skillet over medium heat and sear the chicken for 3-4 minutes on each side until golden brown.

6. Bake to Perfection
Transfer the chicken to a baking dish and bake at 375°F (190°C) for 20-25 minutes, or until fully cooked (internal temperature of 165°F/75°C).

 

7. Rest and Serve
Let the chicken rest for 5 minutes before slicing. Serve warm and enjoy!
