For the Crusts:

  • 1 ½ cups crushed vanilla wafers or graham crackers

  • 6 tbsp unsalted butter, melted

  • 2 tbsp granulated sugar

For the Banana Layer:

  • 23 ripe bananas, sliced thin

For the Pudding Filling:

  • 1 (3.4 oz) package instant vanilla pudding mix

  • 1 ½ cups cold milk

  • ½ cup heavy cream

  • 1 tsp vanilla extract

For the Topping:

  • 1 ½ cups whipped topping or whipped cream

  • Extra crushed cookies, banana slices, or chocolate shavings (for garnish)


Instructions

Step 1: Make the Crust
In a mixing bowl, combine crushed cookies with melted butter and sugar.
Stir until the mixture resembles wet sand.
Line a muffin tin with cupcake liners or lightly grease tart pans.
Spoon about 2 tablespoons of crust mixture into each cup and press firmly into the bottom.
Refrigerate for at least 15 minutes to firm up.

Step 2: Prepare the Pudding Filling
In a medium bowl, whisk together the instant pudding mix, milk, heavy cream, and vanilla extract.
Let it sit for 5 minutes to thicken, then whisk again until smooth and creamy.

Step 3: Assemble the Mini Pies
Place 2–3 banana slices on top of each crust.
Spoon or pipe the pudding mixture on top, filling each cup almost to the top.
Smooth the surface with a spoon or spatula.

Step 4: Add Whipped Topping
Top each mini pie with a swirl or dollop of whipped topping.
Garnish with extra banana slices, cookie crumbs, or chocolate shavings if desired.

Step 5: Chill and Serve
Refrigerate the mini pies for at least 1 hour before serving to allow the filling to set.
Serve chilled and enjoy!
