-
1½ cups all-purpose flour

1 tsp baking powder
-
½ tsp baking soda
-
½ tsp salt
-
1 tsp ground ginger
-
½ tsp cinnamon
-
2 large eggs
-
½ cup honey
-
¼ cup orange juice (freshly squeezed preferred)
-
2 tsp orange zest (from about 1 large orange)
-
½ cup plain Greek yogurt or sour cream
-
½ cup vegetable oil (or melted butter)
-
1 tsp vanilla extract
-
1 tbsp freshly grated ginger (optional for extra spice)
For the Honey Orange Glaze (Optional):
-
¼ cup powdered sugar
-
1 tbsp honey
-
1 tbsp orange juice
Instructions
Step 1: Preheat and Prep
-
Preheat oven to 350°F (175°C).
-
Lightly grease a muffin tin, mini bundt pans, or a loaf pan. If using liners for muffins, place them now.
Step 2: Mix Dry Ingredients
3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, ground ginger, and cinnamon. Set aside.
Step 3: Mix Wet Ingredients
4. In a separate large bowl, whisk the eggs until smooth.
5. Add honey, orange juice, orange zest, yogurt, oil, vanilla extract, and grated fresh ginger if using.
6. Whisk until the mixture is well combined and smooth.
Step 4: Combine Wet and Dry
7. Gradually add the dry ingredients to the wet mixture.
8. Stir until just combined. Do not overmix—batter should be smooth but slightly thick.
Step 5: Fill the Pan and Bake
9. Spoon batter into prepared pan(s), filling each cavity about ¾ full.
10. For muffins or mini bundts, bake for 18–22 minutes.
11. For a loaf, bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
12. Let cakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Step 6: Make and Apply the Glaze (Optional)
13. In a small bowl, whisk together powdered sugar, honey, and orange juice until smooth.
14. Once cakes are completely cooled, drizzle glaze over the top or brush on for a shiny finish.
15. Let the glaze set for 10–15 minutes before serving.
Notes
Use Room Temperature Ingredients – This helps everything mix evenly.
Don’t Skip the Zest – It gives the cakes a bright, fragrant citrus note.
Add Crunch – Stir in a handful of chopped walnuts or almonds for texture.
Make Ahead – These cakes keep well for days and taste even better the next day.
Go All-Natural – Use raw honey and fresh orange juice for the best flavor.
