Ingredients
For the Chicken Stir-Fry:

1 lb boneless, skinless chicken breast (or thighs), cut into bite-sized pieces

1 red bell pepper, sliced

For the Orange Sauce:

½ cup fresh orange juice

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or brown sugar

1 teaspoon toasted sesame oil

1 teaspoon cornstarch (mixed with 1 tablespoon water)
Instructions
Toss chicken pieces with cornstarch in a bowl until well coated. This gives it a light, crisp finish when cooked.
In a small bowl, whisk together orange juice, soy sauce, vinegar, honey, and sesame oil. Stir in the cornstarch slurry. Set aside.
Heat sesame oil in a large skillet or wok over medium-high heat. Add chicken and cook 5–6 minutes until browned and cooked through. Transfer to a plate.
In the same pan, add garlic, ginger, and all your chopped veggies. Stir-fry for 3–4 minutes until just tender but still crisp.
Return chicken to the pan. Pour in the orange sauce and stir everything together. Cook another 2–3 minutes, until the sauce thickens and glazes the chicken and vegetables.
Serve hot over rice or noodles. Sprinkle with sesame seeds and green onions. Dig in!
