Ingredients

For the Packets:
1 lb thinly sliced beef (ribeye or sirloin works great)
2 cups baby potatoes, halved or quartered
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 yellow onion, thinly sliced
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
½ tsp smoked paprika
1 tsp salt
½ tsp black pepper

For the Cheese:
1½ cups shredded provolone cheese
4 slices mozzarella or cheddar cheese (optional for extra melt)

For Serving & Assembly:
4 large sheets of heavy-duty aluminum foil
Fresh parsley, chopped (optional for garnish)
Crusty rolls or hoagie buns (optional for sandwich style)


Instructions

Step 1: Preheat & Prep
Preheat your grill to medium-high heat or your oven to 400°F (200°C).
Tear off four large sheets of heavy-duty foil and set aside.

Step 2: Season the Filling
In a large bowl, combine the sliced beef, potatoes, bell peppers, and onions.
Drizzle with olive oil and sprinkle on garlic powder, onion powder, Italian seasoning, smoked paprika, salt, and pepper.
Toss everything together until evenly coated and well mixed.

Step 3: Assemble the Packets
Divide the beef and veggie mixture evenly among the four foil sheets.
Top each pile with a generous amount of shredded provolone cheese.
Add a slice of mozzarella or cheddar on top for extra gooeyness (optional).
Fold the foil into secure packets by bringing two sides together and folding over, then crimping the edges tightly to seal.

Step 4: Cook the Packets
Grill Method:
Place foil packets on the grill over medium-high heat. Cook for 12–15 minutes, flipping once halfway through.
Oven Method:
Place the foil packets on a baking sheet and bake for 20–25 minutes, until the beef is cooked and the potatoes are tender.

Step 5: Open & Finish
Carefully open the foil packets (watch out for steam!).
If desired, sprinkle more cheese on top and let it melt with the residual heat, or pop under the broiler for 1–2 minutes for a golden cheese crust.
Garnish with fresh chopped parsley.

Step 6: Serve & Enjoy
Serve straight from the foil for a rustic feel, or scoop onto a plate.
