Instructions

Step 1: Prepare the Wet Ingredients

  1. In a large bowl, combine ricotta, milk, egg yolks, vanilla extract, and lemon juice (if using).

  2. Mix until smooth and creamy using a whisk or spoon.

Step 2: Mix the Dry Ingredients

  1. In another bowl, whisk together flour, sugar, baking powder, and salt.

  2. Add the dry mixture to the wet ingredients and stir until just combined.

  3. If using lemon zest or cinnamon, fold it in here.

Step 3: Whip the Egg Whites

  1. In a clean bowl, beat egg whites with an electric mixer until stiff peaks form.

  2. Gently fold the whipped egg whites into the batter in two additions, using a spatula.

  3. Be careful not to overmix—this step makes the pancakes extra fluffy.

Step 4: Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

  2. Scoop about ¼ cup of batter per pancake onto the hot surface.

  3. Cook for 2-3 minutes, until bubbles form and edges are set.

  4. Flip and cook another 1-2 minutes until golden brown and cooked through.
