For the Dough:

  • 3 cups all-purpose flour

  • 2¼ tsp instant yeast (1 packet)

  • 1 tsp granulated sugar

  • 1 tsp salt

  • 1 cup warm water (about 110°F)

  • 2 tbsp olive oil

For the Garlic Herb Butter Coating:

  • 4 tbsp unsalted butter, melted

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1½ tbsp fresh rosemary, finely chopped

  • ½ tsp salt

  • ¼ tsp black pepper

  • ⅓ cup grated parmesan cheese (optional)

Optional Garnishes:

  • Extra rosemary sprigs

  • Flaky sea salt

  • More grated parmesan


Instructions

Step 1: Make the Dough
In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
Add olive oil, salt, and flour. Stir to form a soft dough.
Knead the dough for 8–10 minutes until smooth and elastic.
Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

Step 2: Mix the Garlic Butter Coating
In a small bowl, whisk together melted butter, olive oil, minced garlic, chopped rosemary, salt, pepper, and parmesan (if using). Set aside.

Step 3: Shape the Dough Balls
Once the dough has risen, punch it down and divide it into 30–35 small balls (about 1½-inch pieces).

Step 4: Dip and Layer
Dip each dough ball into the garlic butter mixture, coating well.
Layer the coated dough balls into a greased bundt or loaf pan.
Sprinkle with additional parmesan and rosemary between layers if desired.

Step 5: Second Rise
Cover the pan and let the dough rise again for 30–40 minutes until puffed.

Step 6: Bake
Preheat the oven to 350°F (175°C).
Bake the bread for 30–35 minutes or until the top is golden brown.
If the top is browning too quickly, tent with foil during the last 10 minutes.

Step 7: Cool & Serve
Let the bread cool in the pan for 10 minutes.
Invert carefully onto a plate or serving board.
Garnish with more rosemary, flaky salt, or parmesan if desired.
Serve warm and pull apart to enjoy!
