Ingredients:

  • 1 cup long-grain white rice
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder

  • 1 (14.5 oz) can diced tomatoes with juice
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 cups vegetable or chicken broth
  • 1/2 cup frozen peas (optional)
  • 1 tablespoon chopped fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions:

Step 1: Cook the Rice

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add diced onion and sauté for 3-4 minutes until softened.
  3. Add minced garlic, cumin, paprika, chili powder, salt, and black pepper. Stir for 1 minute until fragrant.
  4. Add the rice and stir to coat it with the spices and oil. Let it cook for about 2 minutes, allowing the rice to lightly toast.

Step 2: Add Liquids and Simmer

  1. Stir in the diced tomatoes with juice and broth.
  2. Bring to a boil, then reduce the heat to low.
  3. Cover the pan and simmer for 15-20 minutes, or until the rice is fully cooked and the liquid is absorbed.

Step 3: Add Beans and Peas

  1. Once the rice is done, fluff it with a fork.
  2. Gently fold in the black beans and frozen peas (if using). Cover and let it sit for 5 minutes to heat through.

Step 4: Serve

  1. Garnish with freshly chopped cilantro.
