Ingredients
For the Filling:

1 tbsp olive oil

1 small onion, finely chopped

2 garlic cloves, minced

6 oz fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

½ tsp salt

¼ tsp black pepper

¼ tsp ground nutmeg (optional for extra depth)

½ cup ricotta cheese

½ cup crumbled feta cheese

½ cup shredded mozzarella cheese

1 egg, beaten (to bind the filling)
For the Pastry:

1 sheet frozen puff pastry, thawed

1 egg, beaten (for egg wash)

1 tbsp sesame seeds or poppy seeds (optional garnish)
Instructions
Step 1: Cook the Spinach Mixture

Heat olive oil in a skillet over medium heat.

Add chopped onion and cook for 3–4 minutes until softened.

Stir in garlic and cook for another 30 seconds.

Add chopped spinach, salt, pepper, and nutmeg. Cook until spinach is wilted and all moisture has evaporated (about 3–5 minutes).

Remove from heat and allow to cool slightly.
Step 2: Mix the Cheese Filling

In a mixing bowl, combine ricotta, feta, and mozzarella cheeses.

Stir in the cooled spinach mixture and 1 beaten egg.

Step 3: Prepare the Puff Pastry

Preheat oven to 400°F (200°C).

Lightly flour your work surface and unfold the puff pastry sheet.
