For the Filling:

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 6 oz fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp ground nutmeg (optional for extra depth)

  • ½ cup ricotta cheese

  • ½ cup crumbled feta cheese

  • ½ cup shredded mozzarella cheese

  • 1 egg, beaten (to bind the filling)

For the Pastry:

  • 1 sheet frozen puff pastry, thawed

  • 1 egg, beaten (for egg wash)

  • 1 tbsp sesame seeds or poppy seeds (optional garnish)


Instructions

Step 1: Cook the Spinach Mixture

  1. Heat olive oil in a skillet over medium heat.

  2. Add chopped onion and cook for 3–4 minutes until softened.

  3. Stir in garlic and cook for another 30 seconds.

  4. Add chopped spinach, salt, pepper, and nutmeg. Cook until spinach is wilted and all moisture has evaporated (about 3–5 minutes).

  5. Remove from heat and allow to cool slightly.

Step 2: Mix the Cheese Filling

  1. In a mixing bowl, combine ricotta, feta, and mozzarella cheeses.

  2. Stir in the cooled spinach mixture and 1 beaten egg.

  3. Mix until everything is well combined and creamy.

Step 3: Prepare the Puff Pastry

  1. Preheat oven to 400°F (200°C).

  2. Lightly flour your work surface and unfold the puff pastry sheet.

  3. Roll it slightly to smooth the folds and stretch it out a bit.

  4. Cut the pastry into two long rectangles.

Step 4: Assemble the Rolls

  1. Spoon the filling down the center of each pastry strip.

  2. Fold one side of the pastry over the filling, then fold the other side over to create a sealed log.

  3. Flip the rolls seam-side down and cut into 1½ to 2-inch pieces.

Step 5: Bake the Rolls

  1. Line a baking sheet with parchment paper and place the rolls seam-side down.

  2. Brush the tops with beaten egg for a shiny, golden finish.

  3. Sprinkle with sesame or poppy seeds, if using.

  4. Bake for 20–25 minutes or until puffed and deeply golden brown.

Step 6: Cool and Serve

  1. Let the rolls cool for about 5–10 minutes before serving.

  2. Enjoy them warm, or at room temperature as a savory snack or appetizer.

Notes

  • Keep It Cold – Cold pastry puffs up better in the oven.

  • Drain Spinach – Squeeze out any extra liquid to prevent sogginess.
