Ingredients

  • 1 sheet puff pastry, thawed
  • 3 medium tomatoes, thinly sliced
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar (optional, for drizzling)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil (or fresh, for garnish)
  • 1 egg (for egg wash, beaten with 1 tbsp water)
  • Salt and black pepper, to taste

Instructions

Step 1: Prepare the Puff Pastry

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and cut into 4 equal squares or circles.
  3. Place them on a parchment-lined baking sheet.

Step 2: Prepare the Tomatoes

  1. Arrange the tomato slices on a paper towel and sprinkle with salt. Let them sit for 10 minutes to remove excess moisture.
  2. Pat dry with another paper towel.

Step 3: Assemble the Tartlets

  1. Lightly score a ½-inch border around each puff pastry square without cutting through.
  2. Prick the center with a fork to prevent puffing.
  3. Sprinkle mozzarella cheese inside the scored border.
  4. Arrange the tomato slices on top.
  5. Drizzle with olive oil, season with garlic powder, oregano, and black pepper.
  6. Brush the edges with the egg wash for a golden crust.

Step 4: Bake

 

  1. Bake for 18-20 minutes, until the pastry is golden and crisp.
  2. Sprinkle with Parmesan cheese and fresh basil.
  3. Drizzle with balsamic vinegar (optional) for extra flavor.
