For the Casserole:

  • 1 lb ground turkey sausage

  • 10 large eggs

  • ¾ cup milk (any kind – dairy or plant-based)

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella or Monterey Jack cheese

  • 1 red bell pepper, diced

  • 1 small yellow onion, diced

  • 1 cup fresh spinach, chopped

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ¼ tsp salt

  • Non-stick spray or butter for greasing the pan

Optional Toppings:

  • Sliced green onions

  • Diced tomatoes

  • Avocado slices

  • Hot sauce or salsa


Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 375°F (190°C).

  2. Lightly grease a 9×13 inch baking dish with non-stick spray or butter.

Step 2: Cook the Turkey Sausage

  1. In a large skillet over medium heat, cook the turkey sausage, breaking it into small crumbles.

  2. Cook for 6–8 minutes, until fully browned and cooked through.

  3. Remove from heat and drain excess grease if needed.

Step 3: Sauté the Vegetables

  1. In the same skillet, add diced onion and red bell pepper. Sauté for 3–4 minutes until slightly softened.

  2. Stir in chopped spinach and cook for another minute until wilted.

  3. Remove from heat and set aside.

Step 4: Prepare the Egg Mixture

  1. In a large mixing bowl, whisk together the eggs and milk until smooth.

  2. Add garlic powder, onion powder, salt, and black pepper.

  3. Stir in shredded cheddar and mozzarella cheese.

Step 5: Assemble the Casserole

  1. Evenly spread the cooked turkey sausage in the bottom of the prepared baking dish.

  2. Layer the sautéed vegetables over the sausage.

  3. Pour the egg and cheese mixture on top.

  4. Gently mix or press down with a spatula to ensure everything is evenly distributed.

Step 6: Bake the Casserole

  1. Place the casserole in the preheated oven and bake for 30–35 minutes.

  2. The top should be golden and the center should be set (not jiggly).

  3. Insert a knife in the center to check for doneness—it should come out clean.

Step 7: Cool & Serve

  1. Let the casserole rest for 5–10 minutes before slicing.

  2. Top with green onions, avocado, or your favorite condiments.

  3. Serve warm and enjoy!

Notes

Let It Rest – This helps the casserole firm up for easy slicing.
Use Fresh or Frozen Veggies – Just be sure to drain off any excess moisture if using frozen.
Make It Spicy – Add diced jalapeños or a dash of hot sauce to the egg mixture.
