-
1 cup shredded cheddar cheese
-
½ cup shredded mozzarella or Monterey Jack cheese
-
1 red bell pepper, diced
-
1 small yellow onion, diced
-
1 cup fresh spinach, chopped
-
½ tsp garlic powder
-
½ tsp onion powder
-
½ tsp black pepper
-
¼ tsp salt
-
Non-stick spray or butter for greasing the pan
Optional Toppings:
-
Sliced green onions
-
Diced tomatoes
-
Avocado slices
-
Hot sauce or salsa
Instructions
Step 1: Preheat & Prep
-
Preheat your oven to 375°F (190°C).
-
Lightly grease a 9×13 inch baking dish with non-stick spray or butter.
Step 2: Cook the Turkey Sausage
-
In a large skillet over medium heat, cook the turkey sausage, breaking it into small crumbles.
-
Cook for 6–8 minutes, until fully browned and cooked through.
-
Remove from heat and drain excess grease if needed.
Step 3: Sauté the Vegetables
-
In the same skillet, add diced onion and red bell pepper. Sauté for 3–4 minutes until slightly softened.
-
Stir in chopped spinach and cook for another minute until wilted.
-
Remove from heat and set aside.
Step 4: Prepare the Egg Mixture
-
In a large mixing bowl, whisk together the eggs and milk until smooth.
-
Add garlic powder, onion powder, salt, and black pepper.
-
Stir in shredded cheddar and mozzarella cheese.
Step 5: Assemble the Casserole
-
Evenly spread the cooked turkey sausage in the bottom of the prepared baking dish.
-
Layer the sautéed vegetables over the sausage.
-
Pour the egg and cheese mixture on top.
-
Gently mix or press down with a spatula to ensure everything is evenly distributed.
Step 6: Bake the Casserole
-
Place the casserole in the preheated oven and bake for 30–35 minutes.
-
The top should be golden and the center should be set (not jiggly).
-
Insert a knife in the center to check for doneness—it should come out clean.
Step 7: Cool & Serve
-
Let the casserole rest for 5–10 minutes before slicing.
-
Top with green onions, avocado, or your favorite condiments.
-
Serve warm and enjoy!
Notes
Let It Rest – This helps the casserole firm up for easy slicing.
Use Fresh or Frozen Veggies – Just be sure to drain off any excess moisture if using frozen.
Make It Spicy – Add diced jalapeños or a dash of hot sauce to the egg mixture.
Double the Recipe – For large gatherings, make two casseroles or one in a larger dish.
